Today's Lunch

So today has been one of those "I-don't-want-to-do-anything" kind of days which means that I have just been chilling out in the my PJ's at home (how exciting, I know). I got a little creative and decided to make myself one of my favourite lunches.

I've been a vegetarian for almost 6 years now. People often assume that vegetarians eat leafy greens all day long and I've been called a rabbit by my family on many an occasion. Being vegetarian doesn't mean that lunches have to be boring old salads or pastas. I often try to come up with creative meals that are not only tasty but also extremely satisfying. If I'm in a bit of a bind for time, I'll go for a quick soup and add in some spices to give it an extra kick of flavour. However, since I had a little more time on my hands today I decided to make a healthy lunch.

Vegetarian chicken stuffed with broccoli, vegetarian hot dog and homemade corn and black bean salsa
So as the description of the picture says: I had vegetarian chicken that was stuffed with broccoli and a vegetarian hot dog. Both of these were from a brand called Zoglo's that makes a bunch of different vegetarian or "meatless" foods. I often buy food from this brand because everything that I have tried so far is extremely flavourful and reasonably priced.

Homemade salsa
The homemade salsa has become a speciality in my family. I came across the recipe a couple of weeks ago and decided to recreate it for myself. It only takes a handful of ingredients and tastes absolutely divine. It has such fresh flavours that are so well balanced, you can't resist take a bite of it with some multigrain tortilla chips. The corn and black bean pack in a punch of flavour and also make this salsa slightly more hearty and super filling.

It's such a great side paired with chicken, fish or even as a snack to munch on. This is such a great lunch because you get all your essential daily nutrients with the soy-protein based chicken and hot dog, beans, corn and a ton of other veggies.

All in all, I think this shows that being a vegetarian not only means that you can enjoy delicious food, but also that the food you eat is healthy and there are a multitude of options available.

What are you favourite lunchtime meals?

Why the name: Mermaids and Muses?

Hello,

My name is Samara and this is my first attempt at blogging. Let's hope it's a successful one!

I was contemplating, rather deeply, about what to write as my first blog post and then it suddenly hit me. I don't know if many people (or anyone!) will be reading my blog, but I thought it would be best to start off by explaining the choice of my blog's name.

For many years I have been utterly fascinated by/with Greek mythology. It has been a passion of mine, for as long as I can remember, to learn all about it.

Mermaids, although not primarily Greek, tend to show up in a multitude of folklore. They are ethereal creatures which, I myself (guilty as charged), dreamt of being as a little child. I mean how could you not want to be a mermaid? They are such mystical, magical creatures.

Muses, on the other hand, have a special place in Greek mythology as The Muses were the goddesses of the inspiration of literature, sciences and the arts. They were considered the source of the knowledge, related orally for centuries in the ancient culture that was contained in poetic lyrics and myths.

It took me quite a while to figure out what my blog's name should be and I started by haphazardly typing in various blog names until I finally decided that I wanted it to be something related to Greek mythology (can you count how many times I've used "Greek mythology" throughout this post?). I came across Muses at first and then decided that I needed to find another word that started with an "M" as well - a tad bit of alliteration never hurt anyone; plus it always makes things sounds much better.

That's how the blog name: Mermaids and Muses was created.

Well, that's all from me for now. I hope you enjoyed this little post from me and I hope to continue writing.

If you made it this far then I want to start off by saying a big THANK YOU for reading!

Cheers,

Samara
